Cornflakes mixture.

Ingredients:

Raw maize flakes
Avalaki (not the machine made thin one)
Peanuts
Channa dal pwder to prepare boondi or ready made boondi.
Oil
Salt
Red chilli pwder
Curry leaves

Heat oil, fry avalaki, raw maize flakes. You need to fry these in a steel stainer (something like this) and drain oil completely.

Fry peanuts in little oil and keep aside. Same for curry leaves. Smash the fried curry leaves.

Boondi preparation:
Mix channa dal powder in water well and make it as a soft free flow paste.
Heat oil, and take boondi spatula (something like this), pour little of the channa dal paste and allow the mixture to fall as droplets in to the oil with the help of normal spatula. once it is fried, take it and drain it from oil.

Now, add all the above in a vessel and add chill pwder, salt, curry leaves and mix well to eat!

Cashew masala

Here's one more recipe for fried rice/rotis. Health concious people can substitute cashew with channa or green peas...

Ingredients:

Fried cashew/ soaked and cooked green peas/channa or any other sprouts.
Onion - 2 big
Tomatoes - 4 medium sized (preferred country tomato to hybrid)

Til dal - 2 tbsp or coconut - 1/2 cup
Garlic -  2 pods.
Red chilli pwder
Salt to taste
Oil as needed.

Add little oil, fry chopped onion till golden brown. Add chopped tomato and let it cook.
Keep this aside and let it cool.

First grind the Til dal in dry jar and add the above mixture along with red chilli powder, garlic pods, salt.
Fry this mixture again till the water evaporates. Add pinch of garam masala if you like it.

Add fried cashew/ cooked green peas to the above and let it cook for 2 mins.

Brinjal/Capsicum stuffed curry


Ingredients for the stuff: [The below quantities of stuff goes for approx 400 gms of vegetable.]


1. Onion - 2 medium sized.
2. Garlic - 3/4 pods
3. Coconut - 1/4th of a half.
4. Fried peanuts(without oil) - skin peeled - 1 cup.
5. Tamarind paste - 4 tea spoons.
6. Pudina leaves - 1/4th cup.
7. Coriander leaves - 1/4th cup (or) powder - 2 tea spoons
8. Jeera powder - 2 tea spoons.
9. Methi powder - 1 tea spoon.
10. Curry leaves - 1 twig.
11. Chilli powder and salt - according to your taste.

Grind all above ingredients and fry it in 1 table spoon of oil. You have to fry until that 1 table spoon of oil comes out and float.

Brinjal/Capsicum Fry:
Slit/Cut brinjal/capsicum lengthwise without halving them, leaving it as a whole piece. Fry this in 2 tbsp oil, separate till cooked. If you don't want more oil, add less oil, sprinkle water and cover the lid so that it gets cooked with steam.

Final: Now, stuff the mixture in the cooked brinjal/capsicum and then microwave that or fry for 5 mins.
This tastes best with hot rice.

Also, you can prepare curries for roti, by adding boiled channa or any other pulses to this stuff and cook together.

Broken Wheat Kichadi

Dont want to have rice? Looking for some diet recipe..Here you go...

Ingredients:
Broken Wheat - 1 cup
Toor dal - 1/4 cup
Channa dal - 1/4 cup
Red chilli - 2
Sambar powder - 1 spoon
Big Onion -1
Tomato -1
Mustard
Turmeric
chilli powder - 1 spoon
Jeera - 1/2 tbs
curry leaves and corriander leaves for garnishing
Salt as required.

Add carrot, beans and potato if you want. I haven't added it today

Process:

1) Wash Broken wheat, toor dal and channa dal.
2)  cut tomatoes and Onions.
3) In cooker, add little cooking oil, mustard, Jeera, onion, red chilli and tomatto. Fry it well.
4) Now added the washed broken wheat and dal.
5) Add curry leaves and corriander leaves.
6) add 3 1/2 cup of water
7) Pressure cook it. Allow for four to five whisles. As it takes more time to cook.

Now Broken wheat kichadi is ready to eat..

Easy kozhukattai recipe ( Kadubu (in Kannada) or Modhaks (in Marathi))

There are many ways to make kozhukattai. This is can be made instant for breakfast..

Ingredients for grinding:
Rice - 2 cups
Toor dal  - 3/4 cup
Jeera - 2 spoons
Red chilli - 5

For Frying:
Big Onion - 1
Mustard
Jeera - 1 Spoon
Curry leaves
Red chilli - 2
Channa dal - 1 Tbs
Cooking oil
Salt


Process:

1) Grind the ingredients mentioned in mixie. Dont make it to a fine powder. Grind like rava.
2) Heat kadai, add 3 tbs oil, fry mustard, chooped onion, chillie, channa dal,jeera and curry leaves. Add 4 to 5 cups of water.Add required Salt. Let the water boil. Now add the grinded stuff. Make it like upma.
3) Allow it to cool for a while.
4) Now make cylindrical shapped flattened balls
5) We have to steam the kozhukattai's. Use the Idly pan to steam it for 5 mins.

Now tasty kozhukattai rteady to eat. You can prepare coconut chuttney and have with it.

Kids would love this food.

Krithika's Yummy Kalyana Sambar recipe

Kalyana Sambar recipe............

Ingredients:

Vegetables: Drumsticks/Brinjal/Mango/Radish (Any one of this vegetable or mix of all can be used. My vote is for Drumstick and Mango)

Toor Dal - 1 cup
Small onions - 15 no's or 1 big onion
Tomatoes - 2
Gree chilli - 1
Turmeric - A pinch
Tamarind Pulp
Mustard seeds
Corriander leaves to garnish
Hing/Asafoetida - 1 pinch
Cooking oil
Salt

To Grind:
Red chilli - 5
Corriander Seeds - 2 table spoons
Cummin Seeds - 1 table spoon
Methi/fennel seeds - half table spoon
Fried Channa dal - 1 table spoon
Grated Coconut - 1 cup
curry leaves

Start Cooking..................

1) Pressure cook Toor Dal.
2) Boil the desired vegetables sperately. Dont over cook.
3) Fry the items mentioned "To Grind" section and grind it to coarsy paste.
4) In Frying pan, add a spoon of oil, fry mustard, onion and tomatoes
5) Add cooked toor dal, vegetables and the grinded masala. Add Hing. Add required Salt. If you need more spice, please add chilli powder.
6) Let it boil for a min. Then add the tamarind pulp. Bring it to boil. leave for 5 mins and garnish with corriander leaves.

Tasty Sambar ready to eat with Rice or Idly/Dosa.






Anitha's tastiest stuffed brinjal recepie

Stuffed Brinjal Recipe:
Ingredients:
Small size ( if not medium size) violet and white striped fresh brinjals - 12
Tamarind - half lemon size ( or as per your choice of tanginess)
salt as per taste
oil as required

For Stuffing :
Onion big size - 3
garlic - 4
ginger - small piece ( 1 inch)
Red chillies - 6 ( or as per your choice of spice/hot)
pinch of salt
pinch of turmeric

Method:

1.Grind all the ingredients listed for stuffing into smooth paste.
2. make 4 slits on the brinjal from the opposite side ( broader side )of the bringal stem till 3/4 length towards the stem( you can remove or retain the stem as per your choice). repeat this for all the brinjals.
3.stuff the brinjals with the paste made in step1 and marinate then for 10 -15 minutes
4. keep aside the remaining paste.
5. make tamarind juice, put this a big vessel add salt as per taste ( note that a pinch of salt is already added to the gravy) and put on stove
6. once the tamarind juice starts boiling, add the stuffed brinjals. add more water if need and cook the brinjals till they are tender and done.make sure that all the water is dried up.
7. while the brinjals are cooking, put a kadai on stove, add oil as required and add the remaining paste . fry this paste till it becomes golden brown and keep aside
8. add the cooked brinjals to the kadai , and oil as required and fry the brinjals by changing sides frequently till they skin becomes golden brown.once fried enough add the fried paste to the brinjals fry for another 5 minutes and turn of the stove
9. shift the brinjals to serving dish and serve it with palin white rice /rotis .

Shilpa's Style Fried Rice Recipe

Ingredients
-----------
1. Coriander leaves, ginger, garlic, green chilli, onion
2. Garam masala - a pinch (to get the flavour - we use home made masala. so add only a bit since flavour is more; U can add depending on ur masala flavour)
3. Ghee
4. Vegetables (ususally carrot, beans, potato, green peas)
5. Rice, Water

Steps
------
1. Grind all ingredients mentioned in step1. Dont include too much of ginger and garlic, it will give a strong taste.
2. Wash rice and drain the water.
3. Fry the rice in ghee (for abt 5 to 8min). When the grains become bit firm and water is completely gone, u can stop frying. Keep it aside.
4. In the same pan, saute the ground masala, till the raw smell goes.
5. Boil all vegetables (in step4). Do not boil too much, the colour of veg will be lost.
6. Mix all together in rice cooker in the measurement ratio, 1 cup of rice to 2 cups of water. Fried rice ready :)
