Anitha's tastiest stuffed brinjal recepie

Stuffed Brinjal Recipe:
Ingredients:
Small size ( if not medium size) violet and white striped fresh brinjals - 12
Tamarind - half lemon size ( or as per your choice of tanginess)
salt as per taste
oil as required

For Stuffing :
Onion big size - 3
garlic - 4
ginger - small piece ( 1 inch)
Red chillies - 6 ( or as per your choice of spice/hot)
pinch of salt
pinch of turmeric

Method:

1.Grind all the ingredients listed for stuffing into smooth paste.
2. make 4 slits on the brinjal from the opposite side ( broader side )of the bringal stem till 3/4 length towards the stem( you can remove or retain the stem as per your choice). repeat this for all the brinjals.
3.stuff the brinjals with the paste made in step1 and marinate then for 10 -15 minutes
4. keep aside the remaining paste.
5. make tamarind juice, put this a big vessel add salt as per taste ( note that a pinch of salt is already added to the gravy) and put on stove
6. once the tamarind juice starts boiling, add the stuffed brinjals. add more water if need and cook the brinjals till they are tender and done.make sure that all the water is dried up.
7. while the brinjals are cooking, put a kadai on stove, add oil as required and add the remaining paste . fry this paste till it becomes golden brown and keep aside
8. add the cooked brinjals to the kadai , and oil as required and fry the brinjals by changing sides frequently till they skin becomes golden brown.once fried enough add the fried paste to the brinjals fry for another 5 minutes and turn of the stove
9. shift the brinjals to serving dish and serve it with palin white rice /rotis .
