Brinjal/Capsicum stuffed curry


Ingredients for the stuff: [The below quantities of stuff goes for approx 400 gms of vegetable.]


1. Onion - 2 medium sized.
2. Garlic - 3/4 pods
3. Coconut - 1/4th of a half.
4. Fried peanuts(without oil) - skin peeled - 1 cup.
5. Tamarind paste - 4 tea spoons.
6. Pudina leaves - 1/4th cup.
7. Coriander leaves - 1/4th cup (or) powder - 2 tea spoons
8. Jeera powder - 2 tea spoons.
9. Methi powder - 1 tea spoon.
10. Curry leaves - 1 twig.
11. Chilli powder and salt - according to your taste.

Grind all above ingredients and fry it in 1 table spoon of oil. You have to fry until that 1 table spoon of oil comes out and float.

Brinjal/Capsicum Fry:
Slit/Cut brinjal/capsicum lengthwise without halving them, leaving it as a whole piece. Fry this in 2 tbsp oil, separate till cooked. If you don't want more oil, add less oil, sprinkle water and cover the lid so that it gets cooked with steam.

Final: Now, stuff the mixture in the cooked brinjal/capsicum and then microwave that or fry for 5 mins.
This tastes best with hot rice.

Also, you can prepare curries for roti, by adding boiled channa or any other pulses to this stuff and cook together.

  1. Mythili.. super. Came very well. But I added very less oil. With rice, chapathi and also for Dosa it was yaaaammmy
